Where beautiful people go to eat pig

I heard all the buzz from Zagat and Yelp about Diavola’s in Geyserville. Chef Dino Bugica from Santi opened this new italian pizzeria in July and lines have been forming ever since.

After a 30 minute wait on a recent Saturday night I decided that reservations are required.  The restaurant and bar included a great mix of local Gen Xer’s and tourists.  This is definitely the place to be seen, especially if you are hungry.

Our table started with the Salami & Cheese, presented on a heavy wood cutting board.  The selections were taken from Chef Bugica’s line of hand cured artisan meats.  Because we are what we eat (pigs) we also ordered Fritto Misto with sardines, calamari, rock shrimp and vegetables.  The sardines and vegetables were crispy and flavorful.  The calamari however was just ok.

Pizza arrived hot and perfect.  Our table enjoyed the Sonja with marscapone cheese, fresh tomatoes and prosciutto along with the Salsicca made with homemade sausage and pecorino cheese.  The crust on both  was thin and crispy.  The thinly sliced prosciutto was flavorful and delicious.

Not wanting to drink wine that would compete with our food, our table ordered the house jug wine from nearby Hawkes Winery.  The red Tuscan blend was a perfect table wine for the pizza, however I recommend starting with something else if you plan to have wine with your appetizers.

Overall this is a must for any diners searching for real italian food or pizza that should never end up in a cardboard box and delivered in 30 minutes or less.
