Undoubtedly, there are many eager faces pressed up against the windows of the former Mirepoix space in Old Town Windsor, with diners salivating for the highly anticipated Momma Pig’s. The opening was originally scheduled for this week.
But hold your hunger at bay — owners Matthew and Bryan Bousquet just need a little more time to work out final renovations and all the details required to convert what was a Michelin-starred fine French restaurant into a shack serving traditional, homemade barbecue, sauces, sides, breads and desserts.
Now, the new launch date is slated to the July 3rd weekend. Which, of course, is just in time for celebratory fireworks, and a big, traditional barbecue feast.
