Over at the newly updated, newly upscale Restaurant Mirepoix in Windsor, chef-owner Matthew Bousquet is having a grand old time with culinary tricks like the goat cheese foam he poufs atop his onion tart layered with beets and arugula and drizzled in balsamic. The multi-course tasting menu changes nearly every night – though ingredients may remain similar, Bousquet switches how he presents them – lobster and pork belly as a thick slice of braised pig with a small lobster tail one night, for example, and as lobster-truffle ravioli with lardons the next.

Yet, if you’ve long-loved the more casual, classic French dishes such as he used to serve, worry not. Come late December, you can find your fix at the new Bistro M, taking over the former Langley’s on The Green space just around the corner from Mirepoix.

The mood will be “old Parisian,” explains Bousquet’s wife and the restaurant’s wine director and general manager Bryan Bousquet, with a separate dining area and full bar. “Affordable” is another key theme, with lunch entrees slated for under $12 and dinner entrees under $20.

The menu line-up is still evolving, but diners can count on signature favorites at lunch, dinner and Sunday brunch, such as boeuf bourguignon, cassoulet, mussels with frites, and selections from the oyster bar. Customer “musts” like Caesar salad and butterscotch pudding are guaranteed, Bryan promises.

Another old friend is coming back, too. Former Mirepoix chef Ben Davies will be in the kitchen, after leaving two years ago to take sous-chef positions with The Restaurant at Meadowood and Murray Circle at Cavallo Point.

“We’re happy that he’s returning to our family as a partner,” says Bryan. “It’s a great help for us to keep pace of running two restaurants while also taking care of our toddler.”

  1. Who could ask for more good wine and two of the most delicious foods on earth lobster and pork. The sea and the farm together in a gourmet delight sure to satisfy the palate of the lucky person eating it. This restaurant is a must go to just for this one special.
